Banana Bread

1 C all purpose unbleached flour
1 C whole wheat flour
1 tsp baking soda
1/4 tsp salt
1/2 C butter
3/4 C brown sugar
2 eggs, beaten
3 or 4 mashed bananas

In a large bowl sift together flour, baking soda, and salt. In a separate bowl cream together butter and sugar, then stir in eggs and mashed bananas until well blended. Gently fold wet mix into dry mix; stir by hand just until lumps disappear.

Bake at 350 degrees in a buttered loaf pan for about an hour, until knife inserted into center of loaf comes out clean.
