6 apples
1 Tbsp cinnamon
5 Tbsp brown sugar
3 C unbleached all purpose flour
1 Tbsp baking powder
1 tsp salt
4 eggs
1 C canola oil
1/4 C apple juice
1 Tbsp vanilla extract
2 C granulated sugar
Preheat oven to 350 degrees. Grease a 13×9 baking dish.
Peel, core and chop apples into chunks. Toss with cinnamon and sugar and set aside.
Stir together flour, baking powder and salt in a large mixing bowl.
In a separate bowl beat eggs, then add oil, juice, sugar and vanilla, mix well.
Combine wet ingredients with dry ones.

Pour half of batter into prepared pan. Spread half of apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top.
Bake for about 1 hour.
