1 Tbsp olive oil
1 onion
3 cloves garlic
1 28oz can crushed tomatoes
2 oz tomato paste
1 Tbsp dried basil
salt & pepper
Saute diced onion and minced garlic in olive oil until softened. Add crushed tomatoes and tomato paste, mix well. Add spices, then let simmer while you cook the pasta.
The variations on this sauce are endless. Saute any veggies you like along with the garlic and onion, including but not limited to carrots, mushrooms, zucchini, squash, celery, etc. Or puree leftover veggies such as broccoli, green beans, or peas along with some beef broth and add to sauce for added (and hidden!) nutrition. If you like a sweeter sauce, add a few teaspoons sugar. For a creamier sauce, add a few tablespoons butter. Use any herbs you like, fresh or dried.
Also, you can add raw ground meat during the sauteing of the onion and garlic, or add any cooked meat you like while simmering.
