Mexican Lasagna

2 Tbsp olive oil
1 large onion
3 cloves garlic
1 large green pepper
3 carrots
1 large tomato
16 oz can tomato sauce
16 oz can kidney beans
1 C black olives
1 Tbsp chili powder
1 tsp cumin
1 tsp black pepper
1 bag tortilla chips
1 C shredded mozzarella cheese
1 C shredded cheddar cheese


Preheat oven to 350 degrees. Grease an 8x11 dish.

Saute chopped onion, garlic, green pepper, and carrots in olive oil until softened. Stir in chopped tomato, sauce, beans, chopped olives, and spices. Bring to a bubble then reduce heat; simmer until thickened.

Place crumbled tortilla chips on bottom of dish, then 1/3 of veggie mixture, then sprinkle with 1/3 of cheese. Repeat layers twice more.

Bake for 30 minutes.
