1 C unbleached all purpose flour
1/2 C whole wheat flour
1 C brown sugar
1 1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/2 C butter
1 egg
1/2 C milk or vanilla yogurt
Preheat oven to 375 degrees. Butter a 8x8 baking dish.
Sift together flour, sugar, baking powder, cinnamon, and salt. Cut in butter with fork or pastry blender until mixture is crumbly. Set aside 1/2 cup of this mixture.
Add egg and milk or yogurt to remaining dry ingredients. Pour into dish. Sprinkle with 1/2 cup of reserved mixture. Bake 30-35 minutes.
