Apple Pie

2 1/2 C apples
2 tsp butter
1/2 C sugar
dash salt
dash nutmeg
2 Tbsp unbleached all purpose flour
2 Tbsp cinnamon

Peel, core, and dice apples. Place half of the sugar in a prepared pie shell, add the apples, dot with the butter. Sprinkle with the spices. Add a top pie crust, pinch seams together, and cut steam holes. Bake 450 degrees for 10 minutes, then turn oven down to 375 and bake for an additional 40 minutes.
